Holladay Just Got Six New Restaurants. The Crowd Still Shows Up Somewhere Else.

Weeks after Magnolia Bakery opened its doors at Holladay Hills this summer, the line was still snaking past the window on a Tuesday afternoon. A mile away, on a regular Thursday night with no festival on the calendar, the picnic tables at SoHo Food Park were just as full, the way they've been most warm evenings since 2015.

That's the part worth sitting with before you plan a weekend around whatever just opened. Holladay's newest development is real and worth knowing about. But it hasn't replaced the neighborhood's actual social center of gravity. That center was built years ago, runs on a schedule the new retail doesn't touch, and costs nothing to attend.

The development that's actually here now

Holladay Hills is a 58-acre mixed-use project, and this year it went from construction fencing to a functioning commercial strip almost overnight. In a single announcement in May, the developer confirmed a wave of new tenants: Kiln coworking, Bobby's Burgers by Bobby Flay, Magnolia Bakery, The Sicilian Butcher, and Sploot Veterinary Care, with Bobby's Burgers and Kiln already open and the others following through early summer.

The specifics matter more than the word "new." Magnolia Bakery isn't just another bakery chain touching down in Utah. This location is the brand's first franchise store in the country, and the Holladay Hills spot is reportedly the only Magnolia outpost anywhere serving dirty sodas alongside the banana pudding, a menu tweak that only makes sense in a state with a particular soda culture. Bobby's Burgers, tucked next to Trader Joe's and up the street from the Megaplex theaters at 1895 E Rodeo Walk Dr, is the chain's second Utah location after an Orem debut in 2024. The Sicilian Butcher is opening its first Utah store here, built around a build-your-own charcuterie concept. Sploot Veterinary Care is opening its first Utah clinic on the same lot, open 365 days a year.

Then there's Kiln, and this is the tenant that changes the neighborhood's weekday rhythm in a way none of the restaurants do. It's a 52,000-square-foot coworking space, and it has already pulled in teams from Mastercard, T-Mobile, Intuit, Penn Mutual, and Assos. That means Holladay Hills isn't just a place people drive to for dinner. It's now a place people commute to for work, which puts desk workers on that stretch of road at lunchtime on a Tuesday, not just families on a Saturday night. That's a genuinely new pattern for this part of Holladay.

Eleven summers before any of this broke ground

None of that explains why the food trucks at SoHo were still packed on an ordinary Thursday. SoHo Food Park has been running at 4747 S Holladay Blvd since 2015, long enough that it doesn't need a grand opening or a press release to draw a crowd. As of this summer it's open six nights a week, 5 to 8 PM Monday through Thursday and until 8:30 PM on Fridays and Saturdays, closed only on Sundays.

The park runs on its own power hookups, so there's no generator noise competing with conversation, and it's dog friendly, which matters if you're the kind of household that plans an evening out around whether the leash comes too. In 2024 reporting, the manager who books the trucks described scheduling roughly 588 truck appointments across the season and rotating about 65 different trucks through the lot, a level of turnover that keeps regulars coming back because the lineup genuinely changes week to week. Freshies Lobster Company, one of the park's longtime trucks, flies lobster in from Maine every other day and was reported that same year to move around 80 lobster rolls on a good night. That's not a chain expanding into a new market. That's a small operation that has been doing one thing well for years and has the regulars to prove it.

The same older, homegrown pattern shows up a few blocks over at Monti, a health-forward coffee and food concept that took over a former Wendy's near 6135 South and Highland. It's a genuine newcomer, but it operates on the same rhythm as everything else that predates Holladay Hills: no chain backing, no franchise announcement, just a menu built around fresh juices, smoothies, and a Sausage Sami that shows up in enough reviews to suggest it's become a regular order for people who live nearby.

Two different clocks

Here's the part that actually matters if you're trying to plan a week around this neighborhood instead of just reading about it. Holladay right now runs on two separate calendars, and they don't overlap the way you'd expect.

• Weekday lunch now belongs to Holladay Hills, thanks to Kiln's office tenants grabbing food between meetings, a pattern that simply didn't exist on this stretch a year ago
• Most weeknights, SoHo Food Park is the default, free to enter, no reservation, different trucks depending on the night
• Saturday nights belong to the city, not to any retail development, with the Holladay Arts Council running a free Summer Concert Series at Holladay City Hall Park from July 4 through August 22, music starting at 8 PM
• Late summer caps off with the Blue Moon Festival, billed as the concert series' grand finale, a free evening built around an arts market, live music, and food vendors that in past years has drawn crowds in the thousands

If you're only picking one night this month, make it a Saturday. The concert series is free, it's walkable from most of the neighborhood, and it's the one event on this list that isn't tied to any single business surviving or not.

How the rest of the summer actually breaks down

1. Grab lunch or run an errand at Holladay Hills during the week. This is where the new energy actually lives on a Tuesday, between Kiln's coworkers and whatever line has formed at Magnolia Bakery.
2. Head to SoHo Food Park most weeknights for dinner. Check the current lineup before you go, since the trucks rotate and the popular ones book up faster than others.
3. Save Saturday night for Holladay City Hall Park. The concert series runs through August 22, and it's the one plan on this list that costs nothing and doesn't depend on any single restaurant's hours.
4. Watch for the Blue Moon Festival as the season winds down. It's the one night that pulls both crowds, the Holladay Hills regulars and the SoHo regulars, into the same field at the same time.

The bigger point isn't that Holladay got some new restaurants this year, though it did, and a few of them are legitimately first-of-their-kind for the state. It's that the new development moved into a neighborhood that already had a functioning, well-attended social calendar, one that the city runs and a small food truck operator has kept alive for over a decade. The two aren't competing so much as running in parallel, on different nights, for different reasons.
